Raw vegan protein lamington slice

RAW VEEGO PROTEIN LAMINGTON SLICE

How good are bar recipes at the moment! Especially when they're raw, vegan and using high-quality protein like Veego Plant Based Protein. This is one of our favourite recipes so far!

INGREDIENTS

BASE:
1 cup rolled oats (GF if needed)
1 cup almond meal
2 scoops Creamy Vanilla Veego Protein Powder

1/2 cup cacao
1/4 cup maple syrup
25g melted vegan block (or coconut oil) 

BASE METHOD:

In a food processor, blitz oats into a flour, then add the rest of the ingredients until well combined. Press into a lined dish or baking tray and refrigerate while you prepare the next layer.

COCONUT LAYER:

1 1/2 cups desiccated coconut
300g coconut cream (or coconut yoghurt)
1 tbsp coconut oil melted 

COCONUT LAYER METHOD:

In a bowl, mix the ingredients until combined and pour onto the base.

JAM LAYER:

4 tbsp raspberry chia jam of any jam of choice 

JAM LAYER METHOD

To make raspberry chia jam, just boil 250g of frozen raspberries, 2 tbsp of chia seeds and 1 cup of water in a saucepan over medium heat. Wait until liquid has reduced (and is looking like a jam). Pour into a jar and refrigerate until you're ready to use it! - *you can add any sweetener if u want it to be sweeter*

Spread on top of the coconut layer and refrigerate.


CHOCOLATE LAYER:
1/2 cup cacao powder
1/2 cup coconut oil
1/4 cup maple syrup

pinch of salt

CHOCOLATE LAYER METHOD:

Mix and melt until all combined then pour on top of the slice and leave in the fridge until solid.
