Pecan Pie Pudding Pots

Pecan pie lovers will want to listen up to this one! One of our community members whipped up this delicious desert just in time for the festive season. Make one for yourself or a bunch to share with the whole gang! 


300g silken tofu
30g Veego salted caramel protein powder
20g maple syrup
20g almond butter
a pinch of salt
Caramellised pecans:
75g pecans
25g maple syrup
0.5 tsp cinnamon
a pinch of salt

Optional toppings include coconut yoghurt and almond butter.

How to:

  1. Mix the pecans with maple syrup, cinnamon and salt and spread on a baking sheet lined with parchment paper.
  2. Bake for 12-15 minutes at 175 degrees C and leave to cool completely.
  3. Add all the ingredients for the pudding into a blender and blend until completely smooth.
  4. Chop up your pecans and layer the pudding in a jar (or two small jars) with the chopped pecans, some additional almond butter and some coconut yoghurt or coconut whipped cream. Enjoy!
